Unless you are hunting something like wild hogs, an AR10 does the same thing a bolt gun does, but at a heavier weight. It’s beneficial if you need to quickly make follow up shots. I personally hunt with a Remington 700 bolt action. It’s much lighter than my AR10, so I can hike further out and hold the rifle steadier.
